Q:  Do you just pull these values out of your ass?

A:  No.  I got them from various sources on the Internet.  For BV (Balance Value) I mainly used... Sweetness, Bitterness, and Balance.  For IBU's and SRM, I primarily used the Period Table of Beer Styles from Mantis Design.
